Ingredients:

  • 1 cup (225g) full-fat cottage cheese (4% milkfat)
  • 1 cup (125g) self-rising flour
  • 1/4 tsp garlic powder
  • 1 large egg, beaten
  • 3 tbsp everything seasoning

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Place the cottage cheese into a high-speed blender or food processor and process until completely smooth and liquid.
  3. In a large mixing bowl, whisk together the self-rising flour and garlic powder.
  4. Pour the blended cottage cheese into the dry ingredients and stir with a spatula until a thick, slightly tacky dough forms.
  5. Divide the dough into four equal portions on a parchment lined baking sheet.
  6. Flatten each ball into a disc about 1/2 inch thick to achieve the classic 'flagel' (flat bagel) shape.
  7. Generously brush the tops of each flagel with the beaten egg wash.
  8. Sprinkle the everything seasoning over the egg-washed dough, pressing lightly so it sticks.
  9. Bake for 22 minutes until the flagels achieve a deep mahogany-colored crust and are firm to the touch.
