Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) coconut sugar
- 1 tbsp (12g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1 cup (240g) unsweetened applesauce
- 2 large (100g) eggs
- 1/4 cup (60ml) coconut oil
- 1 tsp (5ml) vanilla extract
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (50g) coconut sugar
- 1 tsp (2g) ground cinnamon
- 3 tbsp (42g) unsalted butter
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- In a large bowl, sift together 250g flour, 150g coconut sugar, 12g baking powder, 2g cinnamon, and 3g salt.
- In a separate bowl, whisk together 240g unsweetened applesauce, 2 eggs, 60ml melted coconut oil, and 5ml vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined.
- In a small bowl, stir together 65g flour, 50g coconut sugar, and 2g cinnamon.
- Add 42g cold, cubed butter to the streusel mixture and rub with fingertips until it resembles coarse wet sand.
- Spread the cake batter evenly into the prepared pan and sprinkle the streusel topping uniformly across the surface.
- Bake on the center rack for 40–45 minutes until golden brown.
