Ingredients:

  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 1 cup unsweetened applesauce
  • 0.75 cup brown sugar
  • 0.5 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round or square baking pan with butter or oil, and optionally line the bottom with parchment paper.
  2. In a large bowl, whisk together the brown sugar, oil, egg, and vanilla until the mixture is smooth and the sugar has begun to dissolve.
  3. Fold in the unsweetened applesauce until the batter is fully incorporated, glossy, and uniform.
  4. In a separate medium bowl, combine the flour, rolled oats, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually pour the dry ingredients into the wet mixture. Use a spatula to fold them in gently until no streaks of flour remain, avoiding overmixing.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
