Ingredients:

  • 1 wheel (8 oz / 225g) Brie cheese
  • 3 tbsp (45ml) Fig jam
  • 1 tsp (5ml) Honey
  • 1/4 cup (30g) Pecans
  • 1 sprig Fresh rosemary
  • 1 tbsp (15g) Dried figs

Instructions:

  1. Preheat your oven to 190°C. Line a small baking dish with parchment paper Note: This prevents the jam from sticking to the dish.
  2. Place the cold Brie wheel (225g) in the center of the dish. Note: Cold cheese holds its shape longer in the oven.
  3. Spread 45ml of fig jam in an even layer over the top, letting it run slightly down the sides.
  4. Drizzle 5ml of honey over the jam.
  5. Press 30g of chopped pecans and 15g of diced dried figs into the jam.
  6. Sprinkle finely chopped fresh rosemary over the top.
  7. Bake for 12-15 minutes until the edges are soft and the jam is bubbling.
  8. Remove from the oven and let it rest for 2 minutes before serving.
