Ingredients:

  • 1 lb lean ground beef (90/10)
  • 2 tbsp taco seasoning
  • 1/2 cup chunky salsa
  • 1/4 cup water
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 4 oz diced green chilis, drained
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 cup black olives, sliced
  • 1/4 cup green onions, finely sliced
  • 1 large Roma tomato, diced
  • 1 tbsp fresh cilantro, chopped

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef until cooked through and a crust forms. Drain the rendered fat.
  2. Add taco seasoning, salsa, and water to the beef. Simmer for 3 minutes until the liquid has evaporated and the beef is glossy.
  3. In a medium bowl, use a hand mixer to beat the cream cheese, sour cream, and garlic powder until light and aerated. Fold in the drained green chilis.
  4. Spread the cream cheese mixture into the bottom of a 9x13 inch baking dish in an even layer.
  5. Top with the savory beef layer, followed by a generous layer of shredded sharp cheddar cheese.
  6. Bake in a preheated oven at 350°F (175°C) for 25 minutes until the cheese is bubbling and golden.
  7. Garnish with sliced black olives, diced tomatoes, green onions, and fresh cilantro before serving.
