Ingredients:
- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 0.5 tsp coarse black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp light brown sugar
Instructions:
- Position the oven rack 5–6 inches away from the broiler element and preheat the broiler to High.
- Pat the chicken thighs bone-dry with paper towels to ensure maximum crispiness.
- In a small bowl, combine salt, pepper, smoked paprika, garlic powder, onion powder, and brown sugar. Coat the chicken thoroughly with olive oil and the dry rub mixture.
- Arrange the chicken in a single layer on a foil-lined rimmed baking sheet, ensuring no pieces overlap.
- Broil for 6-7 minutes, then flip the thighs and broil for an additional 5-6 minutes or until the internal temperature reaches 165°F (74°C) and the edges are charred.
