Ingredients:

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp coarse black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp light brown sugar

Instructions:

  1. Position the oven rack 5–6 inches away from the broiler element and preheat the broiler to High.
  2. Pat the chicken thighs bone-dry with paper towels to ensure maximum crispiness.
  3. In a small bowl, combine salt, pepper, smoked paprika, garlic powder, onion powder, and brown sugar. Coat the chicken thoroughly with olive oil and the dry rub mixture.
  4. Arrange the chicken in a single layer on a foil-lined rimmed baking sheet, ensuring no pieces overlap.
  5. Broil for 6-7 minutes, then flip the thighs and broil for an additional 5-6 minutes or until the internal temperature reaches 165°F (74°C) and the edges are charred.
