Ingredients:

  • 1 large head of Green Cabbage (approx. 2 lbs / 900g)
  • 3 tbsp (45ml) Extra Virgin Olive Oil
  • 1 tsp (5g) Smoked Paprika
  • 1 tsp (5g) Garlic Powder
  • 1/2 tsp (2.5g) Fine Sea Salt
  • 1/2 tsp (2.5g) Freshly Cracked Black Pepper
  • 1/4 cup (25g) Freshly grated Parmesan cheese
  • 3 strips Cooked bacon, crumbled
  • 1/2 Lemon, cut into wedges

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Remove any wilted outer leaves from the Green Cabbage. Place it on a cutting board, stem side down.
  3. Using a sharp chef's knife, cut the cabbage into 1 inch thick rounds. Until you see the circular cross section of the leaves.
  4. In a small bowl, whisk together the Extra Virgin Olive Oil, Smoked Paprika, Garlic Powder, Sea Salt, and Black Pepper.
  5. Place the cabbage steaks on the baking sheet. Brush both sides generously with the oil mixture.
  6. Bake for 15 minutes until the edges begin to brown and turn translucent.
  7. Remove the tray and sprinkle the Parmesan cheese and crumbled bacon over each steak.
  8. Return to the oven for 5 minutes until the cheese is melted and golden brown.
  9. Squeeze the fresh lemon wedges over the hot steaks immediately before serving. Until the aroma of citrus hits the air.
