Ingredients:

  • 113g unsalted butter, softened
  • 150g granulated sugar
  • 50g egg, room temperature
  • 6g fresh lemon zest
  • 5ml pure lemon extract
  • 15ml fresh lemon juice
  • 210g all-purpose flour
  • 2g baking soda
  • 1.5g salt
  • 3g cornstarch
  • 120g powdered sugar
  • 30ml fresh lemon juice
  • 0.5ml yellow food coloring

Instructions:

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to prevent sticking.
  2. Beat the softened butter and granulated sugar on medium-high until the mixture is pale and fluffy (about 2-3 minutes).
  3. Mix in the egg, lemon zest, lemon extract, and lemon juice. Beat until the mixture is completely smooth.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cornstarch.
  5. Turn the mixer to low and gradually add the flour mixture. Mix only until the last streaks of flour disappear.
  6. Scoop rounded tablespoons of dough (about 1.5 oz each) and place them 2 inches apart on the prepared baking sheets.
  7. Bake for 11 minutes or until the edges are set but the centers remain soft.
  8. Prepare the glaze by whisking powdered sugar, lemon juice, and food coloring until smooth; drizzle over cooled cookies.
