Ingredients:

  • 1/2 cup (115g) Unsalted Butter, softened to room temperature
  • 3/4 cup (190g) Creamy Peanut Butter
  • 1/2 cup (100g) Granulated Sugar
  • 1/2 cup (100g) Packed Dark Brown Sugar
  • 1 Large Egg, room temperature
  • 1 tsp Pure Vanilla Extract
  • 1.5 cups (190g) All-Purpose Flour, spooned and leveled
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cream the 1/2 cup softened butter, 1/2 cup granulated sugar, and 1/2 cup dark brown sugar until pale and fluffy.
  3. Beat in the 3/4 cup peanut butter, egg, and 1 tsp vanilla until velvety and smooth.
  4. Fold the dry ingredients into the wet mixture until no flour streaks remain.
  5. Stir in the 1/2 cup chocolate chips if you are using them.
  6. Scoop rounded tablespoons of dough and roll them into 1 inch balls.
  7. Press a fork into the top of each ball in a criss cross pattern until slightly flattened.
  8. Bake for 10 minutes until the edges are just barely golden.
  9. Cool on the baking sheet for at least 10 minutes until firm enough to move.
