Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 2 tsp (5g) ground cinnamon
- 1/2 tsp (3g) salt
- 1 cup (245g) unsweetened applesauce
- 3/4 cup (150g) granulated sugar
- 1/3 cup (80ml) vegetable oil
- 1 large egg (50g), room temperature
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) powdered sugar
- 2 tbsp (30ml) milk
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt until no clumps remain.
- In a large bowl, whisk the egg, granulated sugar, vegetable oil, applesauce, and vanilla extract until smooth and sugar begins to dissolve.
- Gently fold the dry ingredients into the wet mixture using a rubber spatula. Stop mixing as soon as no streaks of dry flour remain to avoid over-developing gluten.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55–65 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. If desired, whisk powdered sugar, milk, and cinnamon to create a glaze and drizzle over the cooled loaf.
