Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 2 tsp (5g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1 cup (245g) unsweetened applesauce
  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (80ml) vegetable oil
  • 1 large egg (50g), room temperature
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (60g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1/4 tsp (1g) ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt until no clumps remain.
  3. In a large bowl, whisk the egg, granulated sugar, vegetable oil, applesauce, and vanilla extract until smooth and sugar begins to dissolve.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula. Stop mixing as soon as no streaks of dry flour remain to avoid over-developing gluten.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 55–65 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack. If desired, whisk powdered sugar, milk, and cinnamon to create a glaze and drizzle over the cooled loaf.
