Ingredients:
- 3 large overripe bananas (approx. 375g), mashed
- 1/2 cup unsalted butter (113g), melted and cooled
- 1 large egg (50g), room temperature
- 1 tsp vanilla extract (5ml)
- 3/4 cup light brown sugar (150g), packed
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp fine sea salt (2.5g)
- 1/2 tsp ground cinnamon (1g)
- 1/2 cup semi-sweet chocolate chips (90g), optional
- 1/2 cup chopped walnuts or pecans (60g), optional
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the overripe bananas with a fork or potato masher until mostly smooth.
- Whisk the melted butter into the mashed bananas. Add the brown sugar, egg, and vanilla extract, stirring vigorously until the mixture is glossy.
- Sift the all-purpose flour, baking soda, salt, and cinnamon directly over the wet ingredients.
- Using a silicone spatula, gently fold the dry ingredients into the wet mixture until just combined and no flour streaks remain. Fold in optional chocolate chips or nuts if using.
- Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
