Ingredients:

  • 3 large overripe bananas (approx. 375g), mashed
  • 1/2 cup unsalted butter (113g), melted and cooled
  • 1 large egg (50g), room temperature
  • 1 tsp vanilla extract (5ml)
  • 3/4 cup light brown sugar (150g), packed
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp fine sea salt (2.5g)
  • 1/2 tsp ground cinnamon (1g)
  • 1/2 cup semi-sweet chocolate chips (90g), optional
  • 1/2 cup chopped walnuts or pecans (60g), optional

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas with a fork or potato masher until mostly smooth.
  3. Whisk the melted butter into the mashed bananas. Add the brown sugar, egg, and vanilla extract, stirring vigorously until the mixture is glossy.
  4. Sift the all-purpose flour, baking soda, salt, and cinnamon directly over the wet ingredients.
  5. Using a silicone spatula, gently fold the dry ingredients into the wet mixture until just combined and no flour streaks remain. Fold in optional chocolate chips or nuts if using.
  6. Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
