Ingredients:
- 1 cup (226g) Unsalted Butter, softened to room temperature
- 1.5 cups (300g) Granulated White Sugar
- 2 Large Eggs, room temperature
- 2 tsp Pure Vanilla Extract
- 2.75 cups (345g) All-Purpose Flour
- 2 tsp Cream of Tartar
- 1 tsp Baking Soda
- 0.5 tsp Fine Sea Salt
- 3 tbsp Granulated White Sugar (for coating)
- 1 tbsp Ground Cinnamon
Instructions:
- In a stand mixer or with a hand mixer, beat the softened butter and 1.5 cups of sugar on medium-high for 3 minutes until the texture is pale and velvety.
- Add the eggs one at a time, followed by the vanilla extract, scraping down the sides of the bowl to ensure a perfect emulsion.
- In a separate medium bowl, whisk together the flour, cream of tartar, baking soda, and sea salt.
- Turn the mixer to low and gradually add the dry ingredients to the wet mixture. Mix just until no white streaks remain, being careful not to overmix.
- In a small bowl, combine the 3 tablespoons of sugar and 1 tablespoon of cinnamon for the coating.
- Scoop rounded tablespoons of dough (approximately 1.5 tablespoons each) and roll between your palms until smooth balls form.
- Toss each dough ball thoroughly in the cinnamon sugar mixture until heavily coated, then place on prepared baking sheets and bake for 10 minutes.
