Ingredients:
- 1 cup (200g) Jasmine rice
- 2 cups (480ml) Water
- 1 can (13.5 oz / 400ml) Full-fat coconut milk
- 1/2 cup (100g) Coconut sugar
- 1/2 tsp (2.5g) Sea salt
- 1 tsp (5ml) Vanilla extract
Instructions:
- Rinse the jasmine rice under cold water until the water runs clear. Combine the rinsed rice and 2 cups (480ml) of water in a medium saucepan.
- Bring the rice and water to a boil over medium-high heat, then immediately reduce to low, cover with a tight-fitting lid, and simmer for 15-20 minutes until the water is fully absorbed and the grains are tender.
- Remove the lid and stir in the full-fat coconut milk, coconut sugar, and sea salt.
- Stir constantly over medium-low heat to ensure the sugar dissolves completely until the mixture is a thick, ivory-colored cream.
- Continue to simmer uncovered for another 5-7 minutes, stirring frequently to prevent scorching, until the dessert reaches a velvety, porridge-like consistency that coats the back of a spoon.
- Remove from heat and stir in the vanilla extract for a fragrant finish.
