Ingredients:
- 1/2 cup (100g) small pearl tapioca (dry)
- 1 can (13.5 oz / 400ml) full-fat coconut milk
- 1/2 cup (120ml) water
- 1/3 cup (65g) granulated sugar
- 1/4 tsp (1.5g) fine sea salt
- 1 tsp (5ml) vanilla extract
- 1/4 cup (15g) toasted coconut flakes
- 1 cup (150g) fresh diced mango or pineapple
- 1 tbsp (15ml) lime juice
Instructions:
- Rinse the dry tapioca pearls under cold water for 30 seconds. Note: This removes surface starch and stops clumping.
- Place the pearls in a heavy bottomed saucepan with the water and a pinch of salt.
- Bring the mixture to a gentle boil over medium heat, then immediately turn the heat to low.
- Stir constantly for 5-8 minutes until the pearls turn translucent and the white centers disappear.
- Pour in the full fat coconut milk and stir in the sugar.
- Maintain a low simmer, stirring frequently for 10-15 minutes until the pudding has a velvety sheen and coats the back of a spoon.
- Remove the pot from the heat and stir in the vanilla extract.
- Pour the Coconut Tapioca Pudding into individual glasses.
- Let it cool to room temperature, then move the glasses to the refrigerator to set for at least 2 hours.
- Right before serving, top with toasted coconut flakes, diced mango or pineapple, and a drizzle of lime juice.
