Ingredients:

  • 1 cup (225g) cottage cheese, 4% milkfat
  • 1/4 cup (60g) low-sugar marinara sauce
  • 1/2 tsp (1g) dried Italian seasoning
  • 1/8 tsp (0.5g) garlic powder
  • 1/4 cup (28g) shredded part-skim mozzarella cheese
  • 12 mini pepperonis (15g)
  • 1 tbsp (5g) grated parmesan cheese
  • 2 oz (56g) cooked, shredded chicken breast

Instructions:

  1. Scoop the 1 cup of cottage cheese into a microwave safe bowl.
  2. Stir in the 1/2 tsp Italian seasoning and 1/8 tsp garlic powder directly into the cottage cheese.
  3. Spread the 1/4 cup of marinara sauce over the top of the cottage cheese.
  4. Layer the 2 oz of shredded chicken breast over the sauce.
  5. Sprinkle the 1/4 cup of mozzarella cheese over the chicken.
  6. Arrange the 12 mini pepperonis on top of the mozzarella.
  7. Microwave on high for 2 minutes until the mozzarella is bubbly and translucent.
  8. Remove from the microwave carefully as the bowl will be hot.
  9. Dust the entire surface with 1 tbsp of grated parmesan cheese.
  10. Let it rest for 1 minute until the sauce thickens slightly.
