Ingredients:
- 1 cup (225g) cottage cheese, 4% milkfat
- 1/4 cup (60g) low-sugar marinara sauce
- 1/2 tsp (1g) dried Italian seasoning
- 1/8 tsp (0.5g) garlic powder
- 1/4 cup (28g) shredded part-skim mozzarella cheese
- 12 mini pepperonis (15g)
- 1 tbsp (5g) grated parmesan cheese
- 2 oz (56g) cooked, shredded chicken breast
Instructions:
- Scoop the 1 cup of cottage cheese into a microwave safe bowl.
- Stir in the 1/2 tsp Italian seasoning and 1/8 tsp garlic powder directly into the cottage cheese.
- Spread the 1/4 cup of marinara sauce over the top of the cottage cheese.
- Layer the 2 oz of shredded chicken breast over the sauce.
- Sprinkle the 1/4 cup of mozzarella cheese over the chicken.
- Arrange the 12 mini pepperonis on top of the mozzarella.
- Microwave on high for 2 minutes until the mozzarella is bubbly and translucent.
- Remove from the microwave carefully as the bowl will be hot.
- Dust the entire surface with 1 tbsp of grated parmesan cheese.
- Let it rest for 1 minute until the sauce thickens slightly.
