Ingredients:

  • 4 whole limes, washed and halved
  • 4 cups cold filtered water
  • 1 can (13.5 oz) full-fat coconut milk, chilled
  • 1/2 cup sweetened condensed coconut milk
  • 2 cups ice cubes

Instructions:

  1. Quarter the limes and remove any visible seeds. Place the lime chunks and cold water into the blender.
  2. Pulse on high 5 to 7 times for 2 seconds each. Until the mixture looks chunky and pale green, not completely liquefied. Note: This prevents the pith from releasing bitterness.
  3. Immediately pour the mixture through a fine mesh strainer into a large glass pitcher. Use a spoon to press the pulp to extract all the juice, then discard the solids.
  4. Return the strained lime water to the blender.
  5. Add the chilled coconut milk. Note: Ensure it's cold to prevent separation.
  6. Pour in the sweetened condensed coconut milk and add the ice cubes.
  7. Blend on high for 30 seconds until a thick froth forms on top and the liquid is velvety.
  8. Pour into chilled glasses immediately.
