Ingredients:

  • 2 cups (300g) frozen mango chunks
  • 1 cup (240ml) unsweetened coconut milk
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1/2 tsp vanilla extract

Instructions:

  1. Add the liquid ingredients to the blender first: pour in the coconut milk and lime juice.
  2. Add the Greek yogurt followed by the frozen mango chunks on top to ensure a smooth vortex.
  3. Pulse the blender 5–6 times to break down the large frozen mango chunks into a coarse gravel texture.
  4. Switch to medium-high speed and blend, using a tamper or scraping the sides if necessary to remove air pockets.
  5. Blend on high for the final 20 seconds to aerate the mixture for a light, mousse-like quality.
