Ingredients:

  • 2 lbs chicken wings, split into flats and drumettes
  • 1 tbsp neutral oil
  • 1 tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp onion powder
  • 1/3 cup buffalo hot sauce
  • 2 tbsp unsalted butter, melted
  • 1 tsp honey

Instructions:

  1. Use paper towels to pat the wings until they are bone-dry to the touch. Place them in a large bowl and toss with the neutral oil to provide a binder for the spices.
  2. In a small ramekin, whisk together the baking powder, salt, garlic powder, paprika, pepper, and onion powder. Sprinkle the mixture over the wings and toss thoroughly until every wing is evenly coated and looks slightly dusty.
  3. Preheat the air fryer to 400°F (200°C). Arrange the wings in the basket in a single layer, ensuring they are not touching. Cook for 20 minutes, flipping with tongs at the 10-minute mark, until skin is golden brown and internal temperature reaches 165°F (74°C).
  4. If making saucy wings, whisk the hot sauce, melted butter, and honey in a clean bowl. Transfer the hot wings directly from the air fryer into the sauce bowl and toss until coated. Serve immediately.
