Ingredients:
- 4 salmon fillets (6 oz each), skin-on preferred
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice
- 1 tbsp honey or maple syrup
- 2 cloves garlic, minced (approx. 10g)
- 1 tsp smoked paprika
- 0.5 tsp sea salt
- 0.25 tsp cracked black pepper
- 1 tbsp neutral oil (grapeseed or avocado oil)
- Fresh cilantro or parsley for garnish
- 1 lime, sliced into rounds
Instructions:
- In a small mixing bowl, whisk together the olive oil, lime juice, honey, minced garlic, smoked paprika, sea salt, and black pepper to create the marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Let sit at room temperature for 15 minutes, but no longer than 30 minutes to maintain texture.
- Preheat your outdoor grill to medium-high heat (approximately 400°F / 200°C). Clean the grates thoroughly with a grill brush.
- Dip a folded paper towel in neutral oil and, using tongs, rub the grates to create a non-stick surface.
- Remove salmon from marinade and pat the skin side very dry with a paper towel. Place fillets on the grill, skin-side down.
- Close the lid and cook for 6 minutes without moving the fish. Flip gently and finish cooking for an additional 2-4 minutes until desired doneness is reached.
- Garnish with fresh herbs and grilled lime rounds before serving.
