Ingredients:

  • 4 salmon fillets (6 oz each), skin-on preferred
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced (approx. 10g)
  • 1 tsp smoked paprika
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper
  • 1 tbsp neutral oil (grapeseed or avocado oil)
  • Fresh cilantro or parsley for garnish
  • 1 lime, sliced into rounds

Instructions:

  1. In a small mixing bowl, whisk together the olive oil, lime juice, honey, minced garlic, smoked paprika, sea salt, and black pepper to create the marinade.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let sit at room temperature for 15 minutes, but no longer than 30 minutes to maintain texture.
  3. Preheat your outdoor grill to medium-high heat (approximately 400°F / 200°C). Clean the grates thoroughly with a grill brush.
  4. Dip a folded paper towel in neutral oil and, using tongs, rub the grates to create a non-stick surface.
  5. Remove salmon from marinade and pat the skin side very dry with a paper towel. Place fillets on the grill, skin-side down.
  6. Close the lid and cook for 6 minutes without moving the fish. Flip gently and finish cooking for an additional 2-4 minutes until desired doneness is reached.
  7. Garnish with fresh herbs and grilled lime rounds before serving.
