Ingredients:

  • 3 large green plantains
  • 2 cups neutral oil for frying
  • 1 tsp fine sea salt
  • 1 cup room temperature water
  • 2 cloves garlic, smashed

Instructions:

  1. Cut off both ends of the plantains and score the skin lengthwise. Use your thumb to pry the peel away and slice the fruit into 1-inch thick rounds.
  2. Heat oil in a heavy-bottomed skillet to approximately 325°F (160°C). Fry the plantain wheels for 3–4 minutes per side until pale golden and fork-tender. Drain on paper towels.
  3. While still warm, use a tostonera or flat plate to smash each wheel into a disc approximately 1/4 inch thick.
  4. Prepare the brine by mixing water, salt, and smashed garlic. Quickly dip each smashed plantain disc into the brine, shaking off excess water.
  5. Increase oil heat slightly. Fry the discs a second time for 2 minutes until deep golden brown and crispy. Drain on paper towels and season with extra salt if desired.
