Ingredients:
- 3 large green plantains
- 2 cups neutral oil for frying
- 1 tsp fine sea salt
- 1 cup room temperature water
- 2 cloves garlic, smashed
Instructions:
- Cut off both ends of the plantains and score the skin lengthwise. Use your thumb to pry the peel away and slice the fruit into 1-inch thick rounds.
- Heat oil in a heavy-bottomed skillet to approximately 325°F (160°C). Fry the plantain wheels for 3–4 minutes per side until pale golden and fork-tender. Drain on paper towels.
- While still warm, use a tostonera or flat plate to smash each wheel into a disc approximately 1/4 inch thick.
- Prepare the brine by mixing water, salt, and smashed garlic. Quickly dip each smashed plantain disc into the brine, shaking off excess water.
- Increase oil heat slightly. Fry the discs a second time for 2 minutes until deep golden brown and crispy. Drain on paper towels and season with extra salt if desired.
