Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 1/2 cup low-sodium chicken broth
- 2 tbsp melted unsalted butter
- 1 tbsp fresh lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp paprika
Instructions:
- Whisk the garlic powder, onion powder, oregano, salt, pepper, and paprika in a small bowl.
- Pat the chicken breasts dry with paper towels.
- Coat all sides of the meat with the spice blend, pressing it in with your fingers.
- Pour the chicken broth and lemon juice into the bottom of the slow cooker.
- Place the seasoned chicken breasts in a single layer. Note: Don't stack them or they'll cook unevenly
- Pour the melted butter evenly over the top of each breast.
- Cover and cook on LOW for 3 to 4 hours.
- Check the internal temperature at the 3 hour mark until it reads exactly 165°F (74°C).
- Move the chicken to a plate and tent it loosely with foil.
- Rest for 10 minutes until the juices redistribute before slicing.
