Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp melted unsalted butter
  • 1 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp paprika

Instructions:

  1. Whisk the garlic powder, onion powder, oregano, salt, pepper, and paprika in a small bowl.
  2. Pat the chicken breasts dry with paper towels.
  3. Coat all sides of the meat with the spice blend, pressing it in with your fingers.
  4. Pour the chicken broth and lemon juice into the bottom of the slow cooker.
  5. Place the seasoned chicken breasts in a single layer. Note: Don't stack them or they'll cook unevenly
  6. Pour the melted butter evenly over the top of each breast.
  7. Cover and cook on LOW for 3 to 4 hours.
  8. Check the internal temperature at the 3 hour mark until it reads exactly 165°F (74°C).
  9. Move the chicken to a plate and tent it loosely with foil.
  10. Rest for 10 minutes until the juices redistribute before slicing.
