Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) packed light brown sugar
  • 1 1/2 cups (225g) dried figs, stemmed and quartered
  • 1 tsp (5ml) lemon juice
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (120ml) neutral oil
  • 1/2 cup (120ml) whole milk, room temperature
  • 2 large eggs, room temperature
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Pour the melted butter and brown sugar directly into a 9-inch pan and stir until combined into a smooth paste.
  2. Fold in the quartered dried figs and lemon juice, pressing the figs firmly into the sugar mixture to create an even layer.
  3. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  4. In a large bowl, beat the granulated sugar, oil, eggs, and vanilla extract until the mixture is pale and slightly thickened.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing on low speed just until combined.
  6. Gently pour the batter over the fig layer and smooth the top with a spatula.
  7. Bake at 350°F (175°C) for 35–40 minutes.
