Ingredients:

  • 8 oz (225g) full-fat cream cheese, softened
  • 1/2 cup (120g) sour cream
  • 1/2 cup (120ml) premium blue cheese dressing
  • 2 cups (300g) shredded cooked chicken breast
  • 1/2 cup (120ml) cayenne pepper hot sauce
  • 1 tsp garlic powder
  • 1 cup (115g) shredded sharp cheddar cheese
  • 1/2 cup (115g) shredded Monterey Jack cheese
  • 1/4 cup (40g) Gorgonzola or blue cheese crumbles
  • 2 tbsp sliced green onions

Instructions:

  1. Preheat your oven to 190°C. In a large mixing bowl, beat the softened cream cheese, sour cream, and blue cheese dressing until smooth and aerodynamic with no visible lumps.
  2. Fold in the shredded chicken breast, hot sauce, and garlic powder. Stir until the chicken is completely mahogany-colored and saturated with the sauce.
  3. Stir in half of the shredded cheddar and Monterey Jack cheese. Transfer the mixture to a 2 liter baking dish and smooth the top with a spatula.
  4. Top the mixture with the remaining shredded cheeses and the blue cheese crumbles. Bake for 20 minutes until the edges are bubbling and the cheese on top has developed golden-brown toasted spots.
  5. Remove from oven and let rest for 5 minutes before serving to allow the fats to re-absorb. Garnish with sliced green onions.
