Ingredients:

  • 2 English Muffins, split
  • 1 tbsp Salted Butter, softened
  • 4 slices thick-cut bacon
  • 3 Large Eggs
  • 1 tbsp Heavy cream
  • 1/2 cup Shredded Mozzarella cheese
  • 1/2 tsp Dried Oregano
  • 1 pinch Kosher salt
  • 1 pinch Freshly cracked black pepper

Instructions:

  1. Split the English muffins and toast them in a toaster or under a broiler until the edges are dark gold and the surface is firm. Immediately spread a thin layer of salted butter over the hot muffins to seal the surface.
  2. In a large non-stick skillet over medium heat, cook the bacon until crispy. Remove the bacon to paper towels and crumble, reserving 1 teaspoon of fat in the pan. Whisk eggs with heavy cream and salt, then scramble in the skillet until just set but still glossy.
  3. Set oven to Broil (High). Arrange toasted muffins on a baking sheet. Divide the scrambled eggs, crumbled bacon, and shredded mozzarella evenly across the four halves. Sprinkle with dried oregano.
  4. Broil for 1-2 minutes until the cheese is bubbly and slightly browned. Serve immediately.
