Ingredients:
- 2 English Muffins, split
- 1 tbsp Salted Butter, softened
- 4 slices thick-cut bacon
- 3 Large Eggs
- 1 tbsp Heavy cream
- 1/2 cup Shredded Mozzarella cheese
- 1/2 tsp Dried Oregano
- 1 pinch Kosher salt
- 1 pinch Freshly cracked black pepper
Instructions:
- Split the English muffins and toast them in a toaster or under a broiler until the edges are dark gold and the surface is firm. Immediately spread a thin layer of salted butter over the hot muffins to seal the surface.
- In a large non-stick skillet over medium heat, cook the bacon until crispy. Remove the bacon to paper towels and crumble, reserving 1 teaspoon of fat in the pan. Whisk eggs with heavy cream and salt, then scramble in the skillet until just set but still glossy.
- Set oven to Broil (High). Arrange toasted muffins on a baking sheet. Divide the scrambled eggs, crumbled bacon, and shredded mozzarella evenly across the four halves. Sprinkle with dried oregano.
- Broil for 1-2 minutes until the cheese is bubbly and slightly browned. Serve immediately.
