Ingredients:

  • 1 cup (96g) almond flour
  • 1/2 cup (65g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 tsp (2g) ground cinnamon
  • 1 cup (150g) dried figs, stemmed and finely diced
  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (42g) honey
  • 1 tsp (5ml) almond extract
  • 2 large (110g) eggs
  • 1/4 cup (55g) unsalted butter, melted and cooled
  • 1/4 cup (60ml) whole milk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together almond flour, all-purpose flour, baking powder, salt, and cinnamon until no lumps remain.
  3. In a large bowl, beat eggs and granulated sugar until pale. Stir in the melted butter, honey, almond extract, and milk until the mixture is velvety.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Stop as soon as flour streaks disappear.
  5. Gently stir in the diced dried figs, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 30–35 minutes until the edges are a deep mahogany brown and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
