Ingredients:
- 1 cup (96g) almond flour
- 1/2 cup (65g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 tsp (2g) ground cinnamon
- 1 cup (150g) dried figs, stemmed and finely diced
- 1/2 cup (100g) granulated sugar
- 2 tbsp (42g) honey
- 1 tsp (5ml) almond extract
- 2 large (110g) eggs
- 1/4 cup (55g) unsalted butter, melted and cooled
- 1/4 cup (60ml) whole milk
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with parchment paper.
- In a medium bowl, whisk together almond flour, all-purpose flour, baking powder, salt, and cinnamon until no lumps remain.
- In a large bowl, beat eggs and granulated sugar until pale. Stir in the melted butter, honey, almond extract, and milk until the mixture is velvety.
- Gradually fold the dry ingredients into the wet mixture using a spatula. Stop as soon as flour streaks disappear.
- Gently stir in the diced dried figs, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes until the edges are a deep mahogany brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
