Ingredients:
- 1 cup almond flour (96g)
- 1 cup all-purpose flour (125g)
- 1 tsp baking soda (5g)
- 1/2 tsp ground cinnamon (1g)
- 1/4 tsp kosher salt (1.5g)
- 1/2 cup plain Greek yogurt (120g)
- 1/2 cup honey (170g)
- 2 large eggs
- 1/4 cup extra virgin olive oil (60ml)
- 1 tsp vanilla extract (5ml)
- 6-8 medium fresh figs, quartered
- 1/4 cup slivered almonds (30g)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or fluted tart pan and line the bottom with parchment paper.
- In a medium bowl, whisk together almond flour, all-purpose flour, baking soda, cinnamon, and salt until no clumps remain.
- In a separate larger bowl, whisk eggs and 1/2 cup honey until well combined. Stir in Greek yogurt, olive oil, and vanilla extract until the mixture is smooth and emulsified.
- Gradually add the dry ingredients to the wet mixture, gently folding with a spatula until no streaks of flour remain. Do not overmix.
- Pour the batter into the prepared pan and smooth the top. Arrange the quartered figs on top, pressing them slightly into the batter, and sprinkle evenly with slivered almonds.
- Bake for 30–35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
