Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 1/2 tsp (7g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (120g) plain Greek yogurt
- 1 tbsp (6g) lemon zest, finely grated
- 1 tsp (1g) fresh rosemary, minced extremely fine
- 8-10 oz (225g) fresh figs, stemmed and sliced into rounds
- 1 tbsp (15ml) melted butter, for brushing
- 1/2 cup (60g) powdered sugar
- 1 tbsp (15ml) fresh lemon juice
- 1/4 tsp (0.5g) finely minced fresh rosemary
Instructions:
- Set the oven to 350°F (175°C) and grease an 8 x 4.5 inch loaf pan.
- Beat softened butter and sugar on medium speed for 3–5 minutes until the mixture looks pale and fluffy.
- Add eggs one at a time, beating well after each, then stir in the vanilla extract.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with Greek yogurt. Note: This prevents the batter from separating.
- Gently fold in the lemon zest and minced rosemary until just combined.
- Pour the batter into the pan and smooth the top with a spatula.
- Press fresh fig slices into the surface in an overlapping shingle pattern.
- Brush the fig tops with melted butter.
- Bake for 40–45 minutes until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before moving it to a wire rack.
- Whisk powdered sugar, lemon juice, and minced rosemary until smooth.
- Drizzle the glaze over the cooled Fresh Fig Cake Lemon Rosemary and let it set for 15 minutes.
