Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) packed light brown sugar
- 1 cup (150g) raw walnuts, roughly chopped
- 1 lb (450g) fresh figs, halved lengthwise
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 1/2 cup (120g) full-fat sour cream
- 2 tbsp (30ml) whole milk
Instructions:
- Preheat the oven to 350°F (175°C). Pour the melted butter into the bottom of a 9-inch round cake pan and spread evenly.
- Sprinkle the brown sugar across the butter, scatter the chopped walnuts over the sugar, and arrange the fig halves cut-side down in a circular pattern, pressing them gently into the mixture.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy (approximately 3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternately add the dry ingredients and the combined sour cream and milk to the butter mixture, starting and ending with the flour. Mix until just combined.
- Carefully dollop the batter over the figs and smooth the top with a spatula.
- Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 5 minutes before inverting it onto a cake platter for a clean release.
