Ingredients:
- 480g (4 cups) Confectioners' sugar, sifted
- 45ml (3 tbsp) Whole milk, plus more for thinning
- 45ml (3 tbsp) Light corn syrup
- 5ml (1 tsp) Clear vanilla extract
- 1.25g (1/4 tsp) Fine sea salt
- Gel-based food coloring
Instructions:
- In a large glass mixing bowl, combine the sifted confectioners' sugar and 3 tablespoons of milk. Stir with a silicone spatula or stiff spoon until the mixture is thick and lumpy.
- Add the light corn syrup, vanilla extract, and fine sea salt to the bowl.
- Continue stirring vigorously until the icing transforms into a smooth, thick liquid that resembles the consistency of heavy cream.
- Check the consistency by lifting the spatula and letting the icing drizzle back. For 'border' icing, it should hold its shape for 15 seconds before disappearing. If it is too thick, add more milk 1/2 teaspoon at a time until desired flow is reached.
- Divide into small airtight containers and add gel-based food coloring as desired. Transfer to piping bags or squeeze bottles for decorating.
