Ingredients:
- 1.5 cups (225g) dried figs, stemmed and coarsely chopped
- 0.5 cup (120ml) boiling water
- 1 tsp (5ml) lemon juice
- 1.5 cups (190g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) salt
- 2 large (100g) eggs
- 0.5 cup (120g) plain Greek yogurt, unsweetened
- 0.33 cup (80ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 tbsp (28g) coconut oil, melted
- 2 tbsp (30g) sliced almonds
- 1 tsp (5ml) maple syrup for glazing
Instructions:
- Place the chopped dried figs in a small bowl and cover them with boiling water and lemon juice. Let them steep for 10 minutes until the figs are plump and the liquid has partially absorbed.
- In a large bowl, whisk together the whole wheat flour, baking soda, cinnamon, and salt.
- In a separate bowl, beat the eggs, Greek yogurt, maple syrup, vanilla, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry, stirring with a spatula until just combined.
- Fold in the rehydrated figs and their remaining soaking liquid.
- Pour the batter into a parchment-lined 8-inch round cake pan.
- Sprinkle sliced almonds on top and drizzle with a tiny bit of maple syrup.
- Bake at 350°F (175°C) for 40–45 minutes until the edges are mahogany-colored.
