Ingredients:
- 1 cup (150g) dried figs, finely chopped
- 1/2 cup (120ml) water
- 1 tbsp (15ml) lemon juice
- 1 pinch (1g) salt
- 1 1/2 cups (190g) whole wheat pastry flour
- 1/2 cup (100g) coconut sugar
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1 1/2 tsp (4g) ground cinnamon
- 1/2 tsp (1g) ground cardamom
- 1/4 tsp (1g) ground nutmeg
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 1/2 cup (120ml) low-fat buttermilk
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) powdered sugar
- 1 tbsp (15ml) honey
- 2 tbsp (30ml) milk
Instructions:
- Place the chopped figs, water, lemon juice, and salt in a small saucepan over medium heat. Simmer for 8–10 minutes, stirring occasionally, until the liquid has reduced and the figs have formed a thick paste. Remove from heat and let cool for 5 minutes.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, cardamom, and nutmeg.
- In a separate bowl, beat the softened butter with eggs and vanilla until smooth, then slowly stir in the buttermilk.
- Fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no flour streaks remain.
- Gently fold the cooled fig reduction into the batter.
- Pour the mixture into a greased 9-inch Bundt pan and bake at 350°F (175°C) for 35–40 minutes.
- Whisk together powdered sugar, honey, and milk to create a glaze; drizzle over the cooled cake.
