- 15ml fresh lemon juice
- 250g all-purpose flour
- 3g baking powder
- 1.5g salt
- 120g powdered sugar (for glaze)
- 22.5ml fresh lemon juice (for glaze)
- 5ml melted butter (for glaze)
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Beat softened butter and powdered sugar in a large bowl for two minutes until pale and fluffy.
- Add egg, vanilla extract, lemon juice, and lemon zest; beat on medium speed until smooth and fully incorporated.
- Whisk together flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients on low speed until just combined.
- Scoop rounded tablespoons of dough 2 inches apart on the baking sheet and bake for 10-12 minutes until the bottom edges are slightly golden.
- Whisk glaze ingredients (powdered sugar, lemon juice, melted butter) until smooth.
- Drizzle glaze over cooled cookies, garnish with extra zest, and let set for 15 minutes before serving.
