Ingredients:

  • 115g unsalted butter, softened
  • 90g powdered sugar
  • 1 large egg, room temperature
  • 5ml vanilla extract
  • 6g fresh lemon zest
  • 15ml fresh lemon juice
  • 250g all-purpose flour
  • 3g baking powder
  • 1.5g salt
  • 120g powdered sugar (for glaze)
  • 22.5ml fresh lemon juice (for glaze)
  • 5ml melted butter (for glaze)

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat softened butter and powdered sugar in a large bowl for two minutes until pale and fluffy.
  3. Add egg, vanilla extract, lemon juice, and lemon zest; beat on medium speed until smooth and fully incorporated.
  4. Whisk together flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients on low speed until just combined.
  5. Scoop rounded tablespoons of dough 2 inches apart on the baking sheet and bake for 10-12 minutes until the bottom edges are slightly golden.
  6. Whisk glaze ingredients (powdered sugar, lemon juice, melted butter) until smooth.
  7. Drizzle glaze over cooled cookies, garnish with extra zest, and let set for 15 minutes before serving.
