Ingredients:
- 2 tbsp (12g) Instant Coffee
- 1.5 tbsp (18g) Granulated Sugar or Coconut Sugar
- 2 tbsp (30ml) Boiling Water
- 1 cup (240ml) Unsweetened Almond Milk
- 3-4 Large Ice Cubes
Instructions:
- In a small mixing bowl, combine the instant coffee, sugar, and boiling water. Stir briefly with a spoon until the mixture is a dark, uniform mahogany liquid with no visible granules.
- Using a handheld electric mixer on medium-high speed, whip the mixture for 2 to 3 minutes. The liquid will transform into a thick tan foam that holds stiff peaks.
- Fill a 12oz serving glass with ice cubes and pour in the chilled milk, leaving two inches of space at the top. Use a spatula to dollop the whipped coffee mousse onto the milk.
