Ingredients:
- 1.5 cups (168g) Super fine Almond Flour
- 2 cups (225g) Shredded Mozzarella Cheese
- 2 tbsp (30g) Full fat Cottage Cheese
- 1 large Egg (room temperature)
- 1 tbsp Baking Powder
- 1 large Egg (for egg wash)
- 2 tbsp Everything Bagel Seasoning
Instructions:
- Preheat and Prep. Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine Dry Ingredients. Whisk the 1.5 cups almond flour and 1 tbsp baking powder in a small bowl.
- Melt the Cheese. Place 2 cups mozzarella and 2 tbsp cottage cheese in a large microwave safe bowl. Heat in 30 second intervals until the cheese is completely melted and smooth.
- Incorporate the Egg. Stir one room temperature egg into the melted cheese mixture.
- Mix the Dough. Add the dry ingredients to the cheese mixture. Use a spatula to fold and press until a uniform dough forms without white streaks.
- Hand Kneading. If the dough feels lumpy, turn it out onto a piece of parchment and knead it for about 1 minute. Note: Your hands should be slightly damp to prevent sticking.
- Divide and Shape. Split the dough into 6 equal portions. Roll each into a log and join the ends to form a ring. until you have a smooth, even bagel shape.
- Apply Egg Wash. Whisk the remaining egg and brush it liberally over the tops of each bagel.
- Season Heavily. Sprinkle the 2 tbsp Everything Bagel Seasoning over the top.
- Bake to Perfection. Place in the oven for 15 minutes. Bake until the bagels are deeply golden and firm to the touch.
