Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 1 large red bell pepper, chopped into 1-inch pieces
  • 2 medium carrots, sliced into thin rounds
  • 2 tbsp extra virgin olive oil
  • 3 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tsp lime zest

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a medium mixing bowl, toss the cubed chicken, broccoli, red bell pepper, and carrots with olive oil until evenly coated.
  3. Spread the chicken and vegetables in a single layer across the prepared baking sheet, ensuring they are not crowded to allow for roasting rather than steaming.
  4. Whisk together honey, lime juice, garlic powder, salt, and black pepper in a small bowl to create the glaze.
  5. Drizzle the honey-lime glaze evenly over the chicken and vegetables, tossing gently with a spatula to coat.
  6. Roast in the oven for 18–22 minutes, or until the chicken is opaque throughout (internal temperature of 165°F) and broccoli tips are charred.
  7. Remove from the oven and immediately sprinkle fresh lime zest over the hot ingredients before serving.
