Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

- 2 medium carrots, sliced into thin rounds
- 2 tbsp extra virgin olive oil
- 3 tbsp honey
- 2 tbsp fresh lime juice
- 1 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tsp lime zest
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a medium mixing bowl, toss the cubed chicken, broccoli, red bell pepper, and carrots with olive oil until evenly coated.
- Spread the chicken and vegetables in a single layer across the prepared baking sheet, ensuring they are not crowded to allow for roasting rather than steaming.
- Whisk together honey, lime juice, garlic powder, salt, and black pepper in a small bowl to create the glaze.
- Drizzle the honey-lime glaze evenly over the chicken and vegetables, tossing gently with a spatula to coat.
- Roast in the oven for 18–22 minutes, or until the chicken is opaque throughout (internal temperature of 165°F) and broccoli tips are charred.
- Remove from the oven and immediately sprinkle fresh lime zest over the hot ingredients before serving.
