Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 1 tbsp (6g) fresh lemon zest
  • 2 tbsp (30ml) fresh lemon juice
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (60g) powdered sugar

Instructions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and 3/4 cup granulated sugar until the mixture is pale and fluffy.
  3. Add the egg, lemon zest, and lemon juice to the butter mixture, beating on medium speed until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the flour streaks disappear.
  6. Scoop about 1 tablespoon of dough and roll it into a 1-inch ball.
  7. Roll the dough ball first in the 1/4 cup granulated sugar, then immediately roll it in the powdered sugar until heavily coated.
  8. Place the coated balls on the prepared baking sheets and bake for 12 minutes.
