Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 1 tbsp (6g) fresh lemon zest
- 2 tbsp (30ml) fresh lemon juice
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1/4 cup (50g) granulated sugar
- 1/2 cup (60g) powdered sugar
Instructions:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and 3/4 cup granulated sugar until the mixture is pale and fluffy.
- Add the egg, lemon zest, and lemon juice to the butter mixture, beating on medium speed until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until the flour streaks disappear.
- Scoop about 1 tablespoon of dough and roll it into a 1-inch ball.
- Roll the dough ball first in the 1/4 cup granulated sugar, then immediately roll it in the powdered sugar until heavily coated.
- Place the coated balls on the prepared baking sheets and bake for 12 minutes.
