Ingredients:
- 1/2 cup (115g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (170g) white chocolate chips
Instructions:
- Beat the softened butter, granulated sugar, and lemon zest on medium-high speed for about 2-3 minutes until pale and fluffy.
- Add the egg, lemon juice, and vanilla extract. Beat on medium speed until the mixture is smooth and fully combined.
- In a separate small bowl, whisk the flour, baking soda, and salt. Gradually add this to the wet ingredients on low speed, mixing only until the flour streaks disappear.
- Using a spatula, gently fold in the white chocolate chips until evenly distributed.
- Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart. Bake at 350°F (175°C) for 9-11 minutes until edges are barely golden but centers remain soft.
