Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 ½ tsp (4g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- ¼ tsp (1g) ground cloves
- ½ cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (350g) unsweetened applesauce
- 8 oz (225g) full-fat cream cheese, softened
- ¼ cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch (1g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves until no clumps remain.
- In a large bowl, cream the softened butter and granulated sugar until the mixture looks pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and applesauce until smooth.
- Gradually fold in the dry ingredients. Mix only until the flour streaks disappear.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Beat the cream cheese, butter, powdered sugar, vanilla, and salt together until smooth, then frost the cooled cake.
