Ingredients:
- 1/2 cup (115g) unsalted butter
- 3/4 cup (150g) packed light brown sugar
- 8 fresh figs, halved lengthwise
- 3/4 cup (85g) pecan halves, toasted
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 3/4 cup (170g) unsalted butter, softened
- 2 large eggs, room temperature
- 1 cup (240ml) buttermilk
- 1 tbsp (15ml) vanilla extract
Instructions:
- Melt the butter in a small saucepan over medium heat.
- Stir in the brown sugar and vanilla until the mixture is smooth and bubbling slightly.
- Pour the caramel into the bottom of a 9-inch cast iron skillet or cake pan, spreading it evenly.
- Arrange the halved figs cut-side down in a circular pattern, then tuck the pecan halves into the gaps between the figs.
- Whisk together the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- Beat in the softened butter until the mixture looks like coarse sand.
- Add the eggs one at a time, followed by the buttermilk and vanilla.
- Mix on low speed just until combined, stopping as soon as no streaks of flour remain.
- Carefully pour the batter over the fig and pecan layer, smoothing the top with a spatula.
- Bake at 350°F (175°C) for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for exactly 10 minutes before inverting onto a serving plate.
