Ingredients:

  • 2 cups (300g) cucumber, finely diced
  • 1 cup (130g) red onion, finely diced
  • 1 cup (130g) Roma tomatoes, seeded and diced
  • 1/2 cup (60g) carrots, finely diced
  • 1/4 cup (15g) fresh cilantro, roughly chopped
  • 1 medium (50g) green chili, minced
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tsp (2g) roasted cumin powder
  • 1/2 tsp (3g) black salt
  • 1/4 tsp (1g) black pepper
  • 1 tsp (5ml) olive oil

Instructions:

  1. Dice the cucumber, onion, tomato, and carrots into consistent 1/4-inch cubes. Place all diced vegetables and cilantro into a large mixing bowl.
  2. In a small ramekin, combine the lemon juice, roasted cumin, black salt, and pepper. Whisk vigorously until the salt is fully dissolved. Whisk in the olive oil last to create a light emulsion.
  3. Pour the dressing over the vegetables immediately before serving. Gently fold the dressing into the vegetables until evenly coated.
