Ingredients:
- 2 large Honeycrisp apples (approx. 400g), peeled and diced into 1/2 inch cubes
- 1.5 cups (190g) All-purpose flour
- 2 tbsp (25g) Granulated sugar
- 1.5 tsp Baking powder
- 0.5 tsp Ground cinnamon
- 0.25 tsp Nutmeg
- 0.5 tsp Fine sea salt
- 0.33 cup (80ml) Whole milk
- 1 large Egg
- 1 tsp Vanilla extract
- 1 cup (120g) Powdered sugar, sifted
- 2 tbsp (30ml) Pure maple syrup
- 2 tbsp (30ml) Hot water
- 0.5 tsp Flaked sea salt
- 2 cups neutral oil for frying (approx. 10% absorption)
Instructions:
- Macerate the diced Honeycrisp apples with a pinch of salt. Let them sit for 5 minutes, then pat thoroughly dry with a paper towel to remove excess moisture.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and fine sea salt.
- In a separate jug, combine the milk, egg, and vanilla extract. Gently fold the wet mixture into the dry ingredients until just combined. Fold in the prepared apples.
- Heat 2 inches of neutral oil in a Dutch oven to 350°F (175°C). Drop 1/4 cup portions of batter into the oil and fry for 2-3 minutes per side until deep mahogany brown.
- Whisk powdered sugar, maple syrup, and hot water to create a glaze. Dip the warm fritters into the glaze and immediately sprinkle with flaked sea salt.
