Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 2 medium sweet potatoes, peeled and cubed into 1-inch pieces
- 1 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 3 cloves garlic, minced
- 15 oz kidney beans, drained and rinsed
- 15 oz crushed tomatoes
- 14.5 oz diced tomatoes with juices
- 1 cup low-sodium beef broth
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Heat olive oil in a skillet over medium-high heat.
- Add the ground beef and cook until browned and no longer pink. Drain excess fat from the skillet.
- Stir in the minced garlic for the last 60 seconds until fragrant.
- Transfer the browned meat into the slow cooker.
- Add the cubed sweet potatoes, diced onion, and diced bell pepper to the slow cooker.
- Pour in the crushed tomatoes, diced tomatoes, kidney beans, and beef broth.
- Stir in the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper.
- Cover and cook on High for 6 hours or Low for 8 hours.
