Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 2 medium sweet potatoes, peeled and cubed into 1-inch pieces
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 15 oz kidney beans, drained and rinsed
  • 15 oz crushed tomatoes
  • 14.5 oz diced tomatoes with juices
  • 1 cup low-sodium beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the ground beef and cook until browned and no longer pink. Drain excess fat from the skillet.
  3. Stir in the minced garlic for the last 60 seconds until fragrant.
  4. Transfer the browned meat into the slow cooker.
  5. Add the cubed sweet potatoes, diced onion, and diced bell pepper to the slow cooker.
  6. Pour in the crushed tomatoes, diced tomatoes, kidney beans, and beef broth.
  7. Stir in the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper.
  8. Cover and cook on High for 6 hours or Low for 8 hours.
