Ingredients:

  • 1 cup (150g) fresh strawberries, finely diced
  • 1 tsp (5ml) fresh lemon juice
  • 1 tbsp (15ml) honey
  • 8 oz (225g) cream cheese, softened to room temperature
  • 1/4 cup (60g) plain Greek yogurt, room temperature
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Place the diced strawberries, lemon juice, and honey into a small saucepan over medium heat.
  2. Simmer for 8-10 minutes until the berries have broken down and the mixture looks like a thick syrup.
  3. Remove the pan from heat and let the reduction cool completely. Note: Adding hot syrup to cream cheese will melt it.
  4. Beat the softened cream cheese in a large bowl with your mixer on medium high.
  5. Mix until the cheese is smooth and pale in color.
  6. Slowly add the Greek yogurt and vanilla extract.
  7. Beat for another 2 minutes until the mixture looks velvety and holds soft peaks.
  8. Pour the cooled strawberry reduction into the bowl.
  9. Fold gently with a spatula until the color is a uniform, soft pink.
  10. Chill in the fridge for 30 minutes to stabilize.
