Ingredients:
- 1 cup (150g) fresh strawberries, finely diced
- 1 tsp (5ml) fresh lemon juice
- 1 tbsp (15ml) honey
- 8 oz (225g) cream cheese, softened to room temperature
- 1/4 cup (60g) plain Greek yogurt, room temperature
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Place the diced strawberries, lemon juice, and honey into a small saucepan over medium heat.
- Simmer for 8-10 minutes until the berries have broken down and the mixture looks like a thick syrup.
- Remove the pan from heat and let the reduction cool completely. Note: Adding hot syrup to cream cheese will melt it.
- Beat the softened cream cheese in a large bowl with your mixer on medium high.
- Mix until the cheese is smooth and pale in color.
- Slowly add the Greek yogurt and vanilla extract.
- Beat for another 2 minutes until the mixture looks velvety and holds soft peaks.
- Pour the cooled strawberry reduction into the bowl.
- Fold gently with a spatula until the color is a uniform, soft pink.
- Chill in the fridge for 30 minutes to stabilize.
