Ingredients:
- 1 lb fresh strawberries, stems attached and room temperature
- 10 oz high-quality dark or semi-sweet chocolate (60% cacao)
- 1 tsp refined coconut oil
- 4 oz white chocolate chips or melting wafers
Instructions:
- Wash berries gently and pat dry with paper towels. Lay them on a clean kitchen towel for 30 minutes until bone-dry and room temperature to prevent chocolate seizing.
- Finely chop the dark chocolate. Using a double boiler, melt 2/3 of the chocolate until smooth. Remove from heat and stir in the remaining 1/3 to seed the chocolate for a glossy finish.
- Hold each strawberry by the green calyx. Dip into the melted chocolate, swirling to coat all sides, then place on a parchment-lined baking sheet to set.
