Ingredients:

  • 1 lb Long-stemmed organic strawberries
  • 1 cup 70% Dark Chocolate chips
  • 1.5 tsp Virgin coconut oil
  • 1/4 cup White chocolate chips (low-sugar or stevia-sweetened)

Instructions:

  1. Wash the fruit. Rinse the 1 lb of long stemmed strawberries in cold water. Note: Do this at least 2 hours before you plan to dip them.
  2. Dry and buff. Pat the berries dry with a paper towel, then use a microfiber cloth to gently buff the skin until the surface is completely matte and dry.
  3. Prepare the tray. Line a baking sheet with parchment paper. This ensures the chocolate won't stick and tear away from the berry.
  4. Melt the dark chocolate. Place 1 cup dark chocolate chips and 1.5 tsp coconut oil in a microwave safe bowl.
  5. Heat in bursts. Microwave for 30 seconds, stir, then continue in 15 second intervals until the chocolate is silky and flows off the spoon.
  6. The deep dip. Hold a strawberry by the stem, dip it into the dark chocolate, and swirl gently.
  7. Remove excess. Lift the berry and tap your wrist gently to shake off the extra chocolate until it stops dripping.
  8. Place and set. Lay the berry on the parchment paper. Repeat with all berries and chill for 15 minutes until the shell is firm to the touch.
  9. Melt the white chocolate. Heat 1/4 cup white chocolate chips in a separate bowl in 15 second intervals until fully melted.
  10. Artistic drizzle. Transfer white chocolate to a bag, snip a tiny hole, and sweep back and forth over the dark shells until a thin striped pattern forms.
  11. Final chill. Refrigerate for at least 2 hours to allow the flavors to meld and the shell to fully harden.
