Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (100g) desiccated coconut
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1 cup (240ml) full-fat coconut milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C) and grease two 9-inch pans with butter, lining the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and desiccated coconut until combined.
  3. In a large bowl, beat the softened butter and sugar on medium-high speed until pale and fluffy (about 3 minutes).
  4. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Reduce mixer speed to low and gradually pour in the coconut milk, mixing just until incorporated.
  6. Add the dry flour mixture in three additions, alternating with any remaining coconut milk. Mix until only a few streaks of flour remain.
  7. Divide the batter evenly between the two prepared pans and bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cakes to cool completely before frosting.
