Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (100g) desiccated coconut
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 3 large eggs, room temperature
- 1 cup (240ml) full-fat coconut milk
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C) and grease two 9-inch pans with butter, lining the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and desiccated coconut until combined.
- In a large bowl, beat the softened butter and sugar on medium-high speed until pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Reduce mixer speed to low and gradually pour in the coconut milk, mixing just until incorporated.
- Add the dry flour mixture in three additions, alternating with any remaining coconut milk. Mix until only a few streaks of flour remain.
- Divide the batter evenly between the two prepared pans and bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool completely before frosting.
