Ingredients:

  • 1 box (15.25 oz) lemon cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp milk
  • 1 tsp lemon zest

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine the lemon cake mix, melted butter, and egg. Stir with a spatula until the batter is smooth and glossy, avoiding over-mixing.
  3. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheet.
  4. Bake for 8 to 10 minutes, until the edges are barely golden and the centers remain soft.
  5. While cookies cool slightly, whisk together powdered sugar, lemon juice, milk, and lemon zest until smooth.
  6. Drizzle the glaze over the warm cookies in a zig-zag pattern or dip the tops of the cookies into the glaze.
