Ingredients:
- 1 ½ cups (225g) fresh figs, quartered
- 1 tbsp (15ml) lemon juice
- 1 tbsp (8g) all-purpose flour
- ½ tsp (1g) ground cinnamon
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) light brown sugar, packed
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 ½ tsp (7g) baking powder
- ½ tsp (3g) salt
- ¾ cup (180ml) whole milk, room temperature
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper.
- In a small bowl, toss the quartered figs with lemon juice and cinnamon. Just before adding to the batter, sprinkle with 1 tablespoon of flour and toss until lightly coated.
- Using an electric mixer, cream the softened butter and brown sugar together until the mixture is pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the flour. Mix until just combined, being careful not to overmix.
- Gently fold half of the flour-coated figs into the batter.
- Pour the batter into the prepared pan, top with the remaining figs, and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
