Ingredients:
- 1.5 cups (190g) All-purpose flour
- 1 tsp (5g) Baking powder
- 0.5 tsp (3g) Baking soda
- 0.25 tsp (1.5g) Sea salt
- 0.75 cup (170g) Plain Greek yogurt
- 0.5 cup (120ml) Extra-virgin olive oil
- 0.5 cup (100g) Honey
- 2 Large eggs
- 1 tsp (5ml) Pure vanilla extract
- 0.5 tsp (2g) Ground cardamom
- 8-10 Fresh figs, quartered (approx. 450g)
- 1 tbsp (12g) Sliced almonds
- 1 tsp (5g) Honey
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a large bowl, whisk together the Greek yogurt, olive oil, honey, eggs, and vanilla until the batter is velvety and emulsified. Stir in the ground cardamom.
- Sift the flour, baking powder, baking soda, and salt into the wet mixture. Gently fold with a spatula until no streaks of flour remain; do not overmix.
- Pour the batter into the prepared pan and smooth the top. Press the quartered fresh figs into the batter, cut-side up, in a concentric circle.
- Sprinkle with sliced almonds and drizzle with 1 tsp of honey. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
