Ingredients:

  • 1.5 cups (190g) All-purpose flour
  • 1 tsp (5g) Baking powder
  • 0.5 tsp (3g) Baking soda
  • 0.25 tsp (1.5g) Sea salt
  • 0.75 cup (170g) Plain Greek yogurt
  • 0.5 cup (120ml) Extra-virgin olive oil
  • 0.5 cup (100g) Honey
  • 2 Large eggs
  • 1 tsp (5ml) Pure vanilla extract
  • 0.5 tsp (2g) Ground cardamom
  • 8-10 Fresh figs, quartered (approx. 450g)
  • 1 tbsp (12g) Sliced almonds
  • 1 tsp (5g) Honey

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the Greek yogurt, olive oil, honey, eggs, and vanilla until the batter is velvety and emulsified. Stir in the ground cardamom.
  3. Sift the flour, baking powder, baking soda, and salt into the wet mixture. Gently fold with a spatula until no streaks of flour remain; do not overmix.
  4. Pour the batter into the prepared pan and smooth the top. Press the quartered fresh figs into the batter, cut-side up, in a concentric circle.
  5. Sprinkle with sliced almonds and drizzle with 1 tsp of honey. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
